Cape Caviar is a small operation in Cape Town. We buy direct from trusted producers, hold limited batches, and handle every order ourselves — from the fridge it sits in to the door it arrives at. That is the whole business. There is no warehouse, no reseller chain and no clearance stock.
Four things we do not bend on
Direct sourcing
Straight from trusted producers. No layers, no resellers in between — the reason the price is what it is.
Freshness control
Limited batches, stored at −2 °C to −4 °C and never frozen. We would rather run out than sell tired roe.
Cold delivery
Handed over personally in Cape Town, couriered cold everywhere else. The cold chain is never broken.
Honest grading
Classic and Premium mean something here. Premium is the larger, hand-selected pearl of the same roe, not a marketing word.
Four sturgeons, nothing else
We keep the list short on purpose.
Beluga is the showpiece: large glossy pearls, creamy and long. Russian Sturgeon is the crowd-pleaser — mild, sweet, with a hazelnut note. Bester is a Beluga–Sterlet hybrid, buttery and nutty with a long finish. Sterlet is the gentle way in: small delicate pearls and a clean, pure taste.
Each comes in Classic grade; Beluga and Russian Sturgeon also come in Premium, and in 28 g and 50 g jars that keep beautifully in the fridge and make the better gift.
